Matching a needle to a brine means setting three parameters together: the bore, which is the internal diameter fixed by wall thickness, the number and size of the holes, and where those holes sit on the tube. Thin filtered brines suit a narrow bore and fine holes near the tip; thick marinades need a wider bore and fewer, larger openings.
The relationship between needle bore and brine viscosity is the reason two plants running the same injector, at the same pressure, report different yields. The machine sets pressure, stroke rate and dosage; the needle set decides how much brine passes, where it is released and whether the openings stay clear.

Needle choice by product is covered in how to choose an injector needle and the yield arithmetic in injection yield explained. In this article we take the brine side.
The needle sees two things: how easily the liquid moves through a narrow tube, and whether anything in it is large enough to lodge in an opening. That gives three categories.
ZUST Needles splits its range along the same line, supplying perforated needles with multiple holes for liquid brines and needles with a large opening for thicker marinades, alongside a dedicated thick brine tip. That split is the first fork in injector needle selection by brine.
ZUST Needles supplies injector needles with outer diameters from 1.6 mm up to 6 mm, most commonly 1.6, 2, 2.5, 3, 3.5, 4, 4.5, 5 and 5.5 mm, each available with several internal diameters. The internal diameter is set by wall thickness, and that is where the trade-off lives: on a given outer diameter, a thinner wall opens the bore and raises the volume passed, a thicker wall leaves less bore and higher resistance to breaking.
Viscosity pushes that choice one way. The thicker the brine, the more of the available pressure is spent moving liquid along the tube rather than into the muscle, so a viscous brine wants the widest bore the product tolerates. Product delicacy pushes the other way: a thin fish fillet will not accept a wide tube without visible damage.
Where both requirements apply at once, ZUST Needles produces combined diameter needles from pulled or connected tubes, for example 1.6/2.2 mm, 2/3 mm, 2.5/3 mm, 2.5/4 mm, 3/4 mm and 3.2/4 mm, keeping a fine working section at the tip while a wider tube above it carries the brine with less resistance. ZUST Needles also electropolishes the internal and external surfaces and builds smooth internal channels, so that heavier brines find no anchor points inside the bore.
Once the bore is set, the hole pattern decides what the brine does at the end of the journey. Viscosity moves all three variables.
Number of holes. Several small holes spread one volume of brine in more directions and shorten the distance it must migrate through the fibers, which favors even salt and color in a thin brine. The tip gallery published by ZUST Needles shows patterns from 3 to 10 holes on 3 mm and 4 mm needles, in single-row and distributed layouts. As brine gets heavier the count comes down: fewer openings mean more flow per opening, and less chance of one hole silting up while the rest keep working.
Hole size. We look for a hole diameter that clears the largest particle in the brine with a margin, rather than one that merely matches it. Small holes are an advantage in a filtered brine; in a loaded brine, hole diameter has to grow even if the count stays the same.
Hole position. ZUST Needles places the holes close to the tip, so that the meat is filled at full working depth without brine leaking back along the puncture channel. Position matters more, not less, with a thick marinade: a viscous product migrates slowly, so where it is released is roughly where it stays.
The SCH needles suitable for Schroder injectors are listed with hole patterns adjustable to muscle density and type of brine, and the METQ needles suitable for Metalquimia injectors as available in various hole patterns.
There is a point at which no side hole is large enough. When a marinade carries visible particles, ZUST Needles supplies needles with a single large opening, or the thick brine tip, so that the whole bore becomes the outlet. An open-end needle releases its charge at one point, so distribution then depends on needle density and on tumbling. Pressure does not substitute: forcing a thick brine through side holes that are too small tears fibers and raises drip instead of retention.
We publish the table as a qualitative starting point, not as a specification. Millimeter figures are outer diameters from the standard ZUST Needles size list; wall thickness is relative, chosen per order.
| Outer diameter | Wall thickness | Holes: number and placement | Brine this configuration suits |
| 1.6-2 mm, also combined 1.6/2.2 and 2/3 mm | Thicker relative to bore, for stiffness in a fine tube | Open front, or a few fine openings grouped close to the tip | Thin, fully filtered brine on fish and poultry fillets |
| 2.5-3 mm | Thin, for maximum bore on a small tube | Several fine openings near the tip, in one or two rows | Thin filtered brine, standard curing of boneless cuts |
| 3-4 mm | Medium, balancing bore against breaking resistance | More, finer openings distributed around the tube, close to the tip | Thin to lightly loaded brine at a higher injection level |
| 4-5 mm | Thin, where the product does not stress the needle | Fewer openings of larger diameter, near the tip | Loaded brine with protein, starch or fine ground spice |
| 3-5 mm | Thick, for dense or bone-in product | A small number of large openings, close to the tip | Heavier brine injected into firm muscle or near bone |
| 4-6 mm | Thick, since the open end removes the bore constraint | Single large opening, or thick brine tip | Thick marinade with visible particles |
Every line is adjustable. ZUST Needles adjusts the internal tube diameter, the number of holes, their diameter and their placement for any quantity, whether the brine is runny or thick and whether the product is a thin fish fillet or a thick piece of meat, with no additional design fees and no minimum order quantity. Configurations are supplied as single and quadro needles.
Four things let us settle a configuration: the brine, by what is dissolved and what is suspended in it; the product and target injection level; the injector, since each manufacturer uses its own type of needle fitting and that information is essential if a needle is to fit the machine; and the needle in use today, by code and length.
ZUST Needles manufactures needles to its own designs for the most common brands of injectors, including Fomaco, Schroder, Inject Star and Metalquimia, among others. ZUST Needles is not an agent of any of these companies, and its needles can be made for any type of injector available on the market. The role of the needle inside the head is set out on injector-needles.com.
We recommend the widest bore the product will accept. A viscous brine spends more of the available pressure moving along the tube, so a wider internal diameter delivers more per stroke at the same setting. ZUST Needles sets the bore through wall thickness on a chosen outer diameter, which also determines how much breaking resistance the needle keeps.
Hole count follows brine consistency rather than product size. Thin filtered brines suit several small holes, which spread the charge in more directions and shorten migration distance. Heavier brines suit fewer, larger openings, so that flow per opening stays high and one blocked hole does not unbalance the needle. Patterns published by ZUST Needles run from 3 to 10 holes.
Clogging is governed by the smallest opening in the flow path, not by the bore. A marinade carrying herbs, cracked pepper or pulp will bridge side holes that pass a filtered brine without trouble. The fix is a larger hole diameter, a lower hole count or an open-end needle, not higher pressure, which tears fibers and raises drip.
Rarely well. A pattern optimized for a filtered brine has holes too small for particles, and an open-end needle sized for marinade distributes a thin brine at fewer points than it could. In our experience, plants running both recipes keep two labeled needle sets. ZUST Needles supplies configurations for any quantity, with no minimum order quantity.
Placement stays close to the tip in every case, and matters more with thick brine. A viscous marinade migrates through muscle tissue slowly, so it largely remains where the needle released it. Holes positioned higher up the tube discharge part of the charge into the puncture channel as the needle retracts, and it leaves as drip.
Every configuration and hole pattern described above is one we make to order. We set the bore, the hole number, the hole diameter and the hole placement for the brine that is actually in the tank, and ZUST Needles produces the needles in high-grade AISI 304-316 stainless steel, often with added titanium or other elements that improve durability, electropolished inside and out. Model tables by machine brand are on the products page, the technical background on injector-needles.com, and a brine description with an injector model is enough for us to start a quotation through the contact page.
